  • Landes Farm Duck : at first, we think of foie gras. But in the duck, everything is good. The liver, the gizzards, the other offal, the confit legs and wings, the fillet, the magret, but also the cracklings (the skin, fat and pieces of meat that are scraped to make a pâté) or even the carcass which gives an exceptional rich broth.
  • Free-range poultry : the land is rich and fertile in the Landes region. However, it's not all fattened poultry. Chicken, capon, pullet, guinea fowl, quail… these are the ones that come from farms. But you'll also find game birds like wood pigeon, which is traditionally enjoyed in salmis.
  • Chalosse beef : whether it's Blonde d'Aquitaine, Limousine, or Bazadaise, the beef produced in the Chalosse region is renowned. Its juicy, tender, and delicately marbled meat benefits from a Protected Designation of Origin (PDO) and a Label Rouge quality mark.
  • Oysters and shellfish from the Landes coast: the ocean offers many products to enjoy. Hossegor and Capbreton are renowned for their generous seafood platters.
  • Adour salmon : this wild salmon is caught in the Adour and the Gave de Pau and Gave d'Oloron rivers. It is an exceptional product that deserves special care.

To meet one of the last traditional smokers and learn about smoking techniques, visit La Maison Barthouil in Peyrehorade, which welcomes you to its shop and museum.


  • Sand asparagus : with Protected Geographical Indication status in the Landes region, it grows on its sandy dunes. It is a delicate white asparagus with a light hazelnut flavor.
  • Adour kiwi : it is recognized as a " Protected Geographical Indication " and benefits from the " Label Rouge ". Its high sugar content gives it a very significant sweet flavor.
  • Sweet pepper from Seignanx : its production area is very close to the Basque Country. It is also called "Anglet pepper". It is a green pepper, very mild. It can therefore be eaten raw or cooked.
  • Soustons peanuts : that's rather unusual in the Landes region! But, when you think about it, if its sandy soil is suitable for growing asparagus and carrots, then why not peanuts… For now, only one producer has embarked on the adventure and offers you this unusual product.

Aperitif, digestif and wines from the Landes region…

To fully appreciate these delicious local products from the Landes region, they should be accompanied by good drinks. Aperitifs, wines, beers, or digestifs – the Landes region has no shortage of beverages, to be consumed in moderation, of course!

  • Landes beer : a local, organic, artisanal beer, does that tempt you?
  • Floc de Gascogne : especially appreciated as an aperitif or starter, with melon, it is made from a skillful blend of young Armagnac and grape must. As its name so aptly suggests in Occitan, this "Floc" is truly a bouquet of flowers, with a delicate aroma.
  • Tursan wine : it is the only wine from the Landes region to have both a Protected Designation of Origin (PDO) and a Controlled Designation of Origin (CDO ). The red wines are tannic, similar to Madiran, and pair well with game. The rosé has a very characteristic flinty note.
  • Vin de Pays des Landes : with its " Protected Geographical Indication ", it comes from Bas-Armagnac . It is a simple wine, most often enjoyed as a white, light and fruity.
  • Chalosse wine : produced from the hillsides of Chalosse, it is available in white, rosé, and red. In this case, it perfectly complements another Chalosse product: its beef !
  • Vin des Sables de l'Océan : this ancient vineyard is located on the dunes of the Landes region. In white, its marine notes pair well with seafood platters and fish. However, it is renowned in all three colors.
  • Blanche d'Armagnac : This is a brandy. It is one of the steps in the Armagnac production process. It is a freshly distilled spirit that has not yet aged. It retains fruity and floral notes.
  • Armagnac : it's a must-try in the Landes region. It's famous and prized worldwide. Armagnac is much more than just a digestif. It's a tradition that gives rise to local festivals, like the "Fête de la Flamme" (Festival of the Flame). It's a terroir with ancestral know-how. It's also, and above all, a passion for the distillers, winemakers, and cellar masters who nurture it for many years.

Traditional recipes from the Landes region

All these wonderful products would be nothing without great recipes. They are part of the Landes region's cultural heritage. Passed down from generation to generation, they are now being revisited by renowned chefs. Whether you're a skilled cook or prefer to leave it to the professionals, here are the essential traditional dishes of the Landes:

  • Venison specialties : the Landes region is renowned for its hunting. You can enjoy a variety of game such as deer, roe deer, wild boar, hare, as well as quail and wood pigeon. Wild boar stew is one of its typical dishes. If you're not tempted by large game and its strong flavors, be sure to try the wood pigeon salmis.
  • Like all duck-farming regions, confit is a staple of the local cuisine. Landes cassoulet is a hearty and satisfying winter dish.
  • Garbure : slow- cooked vegetables served with duck or pork. A truly invigorating dish for a rainy or cold day.
  • Pastis landais : it's a delicious and soft cake with a delicate orange blossom aroma, enhanced by a touch of pastis!
  • Croustade or Landes-style tourtière: this is a pie traditionally made with apples. The difference between a croustade and a tourtière, which is a variation of it, lies in the pastry. While a croustade is made with a buttery puff pastry, a tourtière is made with a stretched pastry, nicknamed " bride's veil " in reference to its thinness.
  • Dax Madeleines : to finish on a sweet note, with coffee… A madeleine, but not just any madeleine! The Dax madeleine comes from a traditional and artisanal know-how passed down for five generations.
