Grown on vast plains of sandy soil in a mild oceanic climate, they obtained the PGI (Protected Geographical Indication) designation in 2002, then the Label Rouge certification in 2024, with a few specificities to respect to display these famous labels:

White asparagus from Sables des Landes, a meticulous cultivation

Do you know how white asparagus grows? They come in the form of claws planted each year in the spring, before becoming beautiful vegetables to be harvested the following year in the same season. Arranged in trenches and covered with soil, what we call earthing up the asparagus, they evolve quietly for a year before showing the tip of their nose... and even then! Indeed, white asparagus, unlike violets, never see the sun before harvesting. You must therefore search for them and dig them up delicately so as not to damage this fragile vegetable, clean them, calibrate them and put them in a cool place within 4 hours of coming out of the ground. Harvested by hand from March to June, the White Asparagus of Les Sables des Landes are little buried treasures, the emblem of the Landes and of spring. The principle is the same for purple asparagus, they simply have the opportunity to bring out their head which is colored pink/purple under the rays of the sun.

Asparagus Festival, an unmissable event in the Landes

Do you like this pearly white vegetable, its little nutty taste and its sweetness that melts on the tongue? You will love participating in "l'Asperge en Fête" which energizes Mont-de-Marsan and soon the whole region. Organized over 10 days from March 21 to 31, this event is the 3rd edition in 2025. For the occasion, around thirty chefs enhance asparagus from starter to dessert with creative and gourmet recipes to be enjoyed without moderation. Market, meeting with producers, special menus cooked by passionate chefs, demonstration and entertainment, "l'Asperge en Fête" lives up to its name.
