SINCE THE BEGINNING, foie gras has been one of Maison Barthouil's emblematic products. Gaston Barthouil, the son of a butcher, began making it shortly after opening his delicatessen in 1929. We remain attached to this tradition, because it tells a bit of our family history but also because it marks an attachment strong in our local terroir, famous for its geese and fattened ducks. Moreover, the preparation of our livers is based on artisanal and peasant know-how.
CONSERVATORS BY TRADITION, we want to value the whole animal. Gaston Barthouil was a butcher and his father a butcher ! Moreover, in the duck, nothing is lost. In the kitchen, our team concocts good meals and preserves, embellished with different pieces of duck according to the recipes.
