      Fabrice Galibert has always loved agriculture and wanted to make it his job from an early age. After growing up in Corrèze, another cradle of foie gras and doing several jobs, his love of agriculture caught up with him. La Comtesse de Barole was born from strong encounters that allowed our farmer to train and embark in 2018 on the processing of duck-based products.

      A production where flavors prevail


      Fatty ducks are bred in Barole near Saint-Gor, on the borders of the Landes d'Armagnac. They enjoy themselves in large outdoor parks for 15 weeks before being stuffed with whole grain maize produced on the farm. The small farm in Barole has seen several generations of gourmet farmers grow up. They have always been keen to perpetuate ancestral recipes. Fabrice Galibert therefore quite naturally named his company La Comtesse de Barole to anchor its products in this region.

      Once the ducks have been slaughtered in Montaut in strict compliance with health rules, Fabrice Galibert cooks up tasty recipes. For this, he joined a transformation workshop managed in Cuma. His personal touch? Spices added as the ancients used to do and a hint of Armagnac, another product from the South-West region. La Comtesse de Barole is a small production to give priority to the quality, flavors and delicious smells of your grandmothers' cooking. All the products (foie gras, confits, rillettes and prepared dishes) are made in the traditional way, according to ancestral recipes.

      Ancestral recipes that are perpetuated


      About twenty products are simmered in this way: vacuum-packed semi-cooked foie gras and canned foie gras, dried duck breasts, confit of thighs, sleeves and duck breasts, gizzards, stuffed necks, duck breasts stuffed with foie gras, Gascon aiguillettes, Basque aiguillettes with Espelette pepper, rillettes, rillettes with foie gras, greasers, Gascon pâté with foie gras, duck axoa, duck tajine and duck stew. And at the Comtesse de Barole, we are also thinking about new recipes. In 2020, Parmentier and duck piperade join the products already marketed.

      Where to find the products ?


      Fat fairs, summer and end-of-year markets… you can find the products of La Comtesse de Barole on several markets in New Aquitaine. Fabrice Galibert likes to share with his clients and meet them. He is also present every Saturday morning at the Roquefort market. During the summer season, find La Comtesse de Barole at local farmers' markets in the Landes and in the Bassin d'Arcachon.
